The past several years of the pandemic, and of associated supply-chain shortages, have negatively impacted school food service departments across our country. From shortages of food and non-food items to long delivery delays, it’s been a challenging time for students who eat school meals and for the staff who prepare those meals. Due to limited availability of certain foods, many food service departments were forced to serve fewer home-cooked meals and more “grab-n-go” pre-packed entrees.
For School Year 2022-’23, Dallas ISD’s Food and Child Nutrition Services (FCNS) department is returning to fresh daily cooking in school kitchens across the district. Our new “chef-inspired” line of recipes got their first trial run at Kimball High School. At a recent taste test before the end of the school year, Kimball students sampled two new chef-inspired lunch entrees: cheesy taco pasta and chicken tetrazzini pasta. Created by FCNS chefs and nutritionists, both entrees feature unique taste profiles, whole grains, low-fat cheeses, and most importantly, great taste!
What did the Kimball students think of the new dishes? Both were big hits! The survey results are below:
Given the overwhelmingly positive reviews from Kimball students, we in FCNS can now announce that both of these recipes will be featured on school menus this fall.
